My toddler has recently become quite the picky eater. While at a family dinner, he began eating vegetables if they were covered in a cheese sauce. I was FLOORED. Is that MY toddler eating VEGETABLES? Unreal. So, needless to say, I invented my own cheese sauce and it often shows up on his food! He will literally eat anything covered in it... broccoli, cauliflower, potatoes, brussel sprouts, etc.
Here it is!
1 tsp butter
1 tbsp spelt flour (you can use any flour substitute)
1-1 1/2 cup milk (you can use any milk substitute)
1 cup cheese (I change it up; mozzarella, cheddar, jalapeno)
10-12 frozen pieces of broccoli, food processed
Start by simmering the butter, add the flour once it’s melted to make a rue. Slowly add the milk and whisk it together to decrease chunks. Just before it starts to simmer, add the cheese and mix. Once the cheese is fully blended, add the broccoli and allow it to simmer. Wait until its warm and serve on ANYTHING!
